TASTING NOTES :

Mahogany colour. The olfactory universe opens with notes of prunes, figues and candied oranges. Then the spices arrive, both soft and sweet. Rich yet taut, with silky tannins finely balanced by sweetness.

FOOD PAIRINGS :

A bold pairing for spiced pastilla or aged cheeses like Comté. For dessert, try it with praline or dried-fruit chocolates. Open one hour before and serve at 15°C.

TERROIR AND VINE MANAGMENT :

South-facing slopes of decomposed schist and black marl. Soils are regularly tilled. Goblet-trained vines over 40 years old. Average yield: 18 hl/ha. Planting density: 3,500–4,000 vines/ha.

Manual harvest. Double sorting and destemming.

WINEMAKING:

Extra alcohol is added during the fermentation while the wine is still on the skins (mutage sur grains), and then the whole is allowed to macerate for 30 days to extract the aromas and polyphenols from the grapes, ensuring a nice balance of fruit, alcohol and sugar.

MATURATION AND BOTTLING:

One year in glass demijohns outdoors under the sun, then transferred to old 350-hl oak casks where it remains to this day, continuing its slow, graceful evolution. This exceptionally long maturation—part of the Mas Amiel signature—nurtures a wine of profound aromatic complexity and structural depth.

Looks like prune juice. Smells like liquorice tea, smoked aniseed and linseeds. Amazingly smoky and meaty. Prunes. Staggering concentration – it feels as if it's been extracted from the core of the earth. There is so much here that it's impossible to do any justice to this wine in a quick tasting. This wine needs hours of time and attention. It's a towering sculpture of a wine. To grasp it, you'd need to sit with it, listen to it, give it space to tell its stories.

Our oxidative Vins Doux Naturels, made from old-vine Grenache grapes fortified while still on the skins, spend one full year under the open sky in glass demijohns, exposed to the Roussillon sun and its dramatic temperature shifts, before continuing their slow, decades-long evolution in century-old casks.

PARCELS, GRAPE VARIETIES & TERROIR

90% Grenache Noir, 5% Maccabeu, 5% Carignan

The soils, composed of weathered schist and black marl, benefit from a full south-facing exposure that ensures optimal ripening of the grapes. Vineyard management prioritises traditional ploughing to preserve living soils and encourage deep root systems. The old-vine Grenache, over forty years of age and trained in the traditional goblet bush form, delivers naturally low yields of around 18 hl/ha, with a planting density of 3,500 to 4,000 vines per hectare.
